Vinification: Hand-harvested in small crates, gentle pressing, and fermentation in stainless steel at controlled temperature with selected yeasts. Secondary fermentation follows the Martinotti method, lasting around 60 days. Bottle ageing in the underground cellar at a constant 13–14°C.
Tasting notes: A lively, persistent mousse with a fine, continuous perlage. Bright straw yellow with shimmering highlights. On the nose, fresh and elegant with hints of leavened bread and a citrusy finish. On the palate, savory, well-balanced and highly enjoyable, with excellent persistence.
Pairing: Perfect as an aperitif, yet versatile enough to accompany an entire meal thanks to its balance and freshness.
